Interesting discussion! Personally, I prefer stainless steel knives. They're more rust resistant and low-maintenance.

On the contrary, I feel like carbon knives hold their edge longer. I hate having to sharpen my knives every so often.

It might just depend on what you're comfortable with. I've grown up in a home where we always used carbon knives so that's what I'm used to.

More or less. Though, if you're particular about maintenance, you might lean towards stainless steel.
